Chicken gnocchi soup
Weather your family is sick or it’s just a day for soup this is a heart warming recipe! I have a bigger family who will eat all of it in one night so feel free to cut portions in half!
2 cartons chicken stock
1 1/2 cups heavy whipping cream
1/2 yellow onion
4-5 chopped celery sticks
4-5 chopped carrots
2-3 split and chopped chicken breast(I cook my 3/4 the way first)
1-2 packs of Italian potato gnocchi
2 smashed and chopped garlic cloves
Paprika
Oregano
Salt
Pepper
Dill weed
Red chili flakes
Put 2 cartons of chicken stock into a crock pot. Clean and chop up veggies and add those in as well as any seasonings putting this in high for 5-6 hours or until the veggies get soft. Once they are soft cook up your chicken 3/4 of the way and add into the crock pot along with your gnocchi. Then add in your heavy whipping cream around 1 1/2 cups or so. Cook on high for another 30-45 minutes add a pinch of fresh parmesan and serve! It feels good on the throat and in your belly!
