Ingredients

* 1 cup red lentils

* 2½–3 cups water

* Pinch of salt (optional)

Add any seasoning you like

Rinse 1 cup red lentils and soak 4–6 hours, then drain.

Blend lentils with 2½–3 cups water until smooth.

Cook the mixture in a pan over medium heat, stirring constantly, until thick and glossy and it pulls away from the pan.

Transfer to a lightly oiled container, smooth the top.

Cool, then refrigerate at least 1 hour to set before slicing.
