Mixed Veggie Soup

When the temperature drops and the wind won’t quit… this is the kind of pot you keep on the stove all day. 🥶🔥

The kind of soup that makes the whole house feel warmer.

🥣 Hearty Mixed Vegetable Cold-Front Soup

Ingredients:

• 1 can Goode Foods Mixed Vegetables (undrained)

• 1 tbsp olive oil or butter

• ½ small onion, diced

• 2 cloves garlic, minced

• 4 cups vegetable broth (or chicken broth)

• 1 medium potato, diced small

• ½ tsp dried thyme

• ½ tsp black pepper

• Salt to taste

• Optional: ½ cup cooked pasta, rice, or beans for extra heartiness

👩‍🍳 Instructions:

1️⃣ Build the base

In a large pot, heat oil over medium heat. Add diced onion and cook 3–4 minutes until soft. Stir in garlic and cook 30 seconds.

2️⃣ Add broth & potato

Pour in broth and add diced potato. Bring to a gentle boil, then reduce to a simmer. Cook 10–12 minutes until potatoes are tender.

3️⃣ Add the vegetables

Stir in the entire can of mixed vegetables (liquid included). Add thyme, pepper, and salt. Simmer another 8–10 minutes.

4️⃣ Optional boost

Add cooked pasta, rice, or beans if you want it thicker and more filling.

5️⃣ Serve hot

Ladle into bowls. Add cracked black pepper on top. Serve with warm bread or crackers.

This isn’t trendy food.

It’s “everyone grab a bowl” food.

It’s the kind of soup that doesn’t care what state you’re in or what the weather’s doing outside.
