For Mother’s Day Brunch | Strawberry Muffins
I feel like Mother’s Day brunch calls for something classic and home baked with love. These strawberry muffins absolutely fit the occasion.
They also have fresh fruit and no added sugar, so they are a balanced treat you can feel good about sharing.

Ingredients ——
8 oz fresh strawberries, chopped
1 & 1/2 cups flour
1/4 cup 1:1 sugar replacement (I use Truvia Sweet complete)
1 tsp baking soda
1 tsp baking powder
1 egg
1/4 cup nonfat Greek yogurt
1/2 cup milk (I used almond)
1 tsp vanilla extract
Chop the strawberries into small pieces.
To help keep them bright and red in the baking process, you can add some white vinegar or lemon juice. I used 1/2 tsp white vinegar. Toss them around to coat.
Mix all the other ingredients into a large bowl.
Fold in the strawberries.
Divide into 12 muffin cups. I love using silicone muffin liners, they make it so easy.
Bake at 350° for about 18 minutes. The tops should be golden brown.
