Creamy Tuscan Crockpot Chicken
Creamy, garlicky, and packed with sun-dried tomatoes and spinach—this crockpot chicken tastes like something you’d order at an Italian restaurant but is super easy to make at home.

Ingredients
• 2.5 lbs boneless, skinless chicken breasts
• 1 cup chicken broth
• 1 cup heavy cream
• ½ cup plain Greek yogurt
• 1 cup sun-dried tomatoes
• 4 cups fresh spinach
• 1 cup grated Mozzarella cheese
• 6 cloves garlic, minced
• 2 tbsp Italian seasoning
• 1 tsp red pepper flakes (optional)
• Salt and pepper to taste
• Fresh basil for garnish
Instructions
1. Place chicken breasts in the slow cooker.
2. Add chicken broth, garlic, Italian seasoning, and red pepper flakes.
3. Cook on LOW for 5–6 hours or HIGH for 3–4 hours.
4. Remove the chicken and shred it or cut into bite-size pieces.
5. In a bowl, whisk together heavy cream, Greek yogurt, and Mozzarella cheese until smooth.
6. Stir the cream mixture into the slow cooker.
7. Add the sun-dried tomatoes and spinach.
8. Return the chicken to the slow cooker and stir everything together.
9. Cook on HIGH for about 15 minutes, until the spinach is wilted and the sauce thickens.
10. Season with salt and pepper to taste.
11. Garnish with fresh basil before serving.
