Tender Chicken Thighs & Roasted Potatoes
Ingredients for the chicken
- 1.5 lbs chicken thighs
- 2-3 whole garlic cloves, peeled
- 1 Small bundle of poultry herb blend
- 1 apple, cut into 4 pieces
- 1tbs butter
- 1/2-1 cup of chicken broth (for this recipe I used better than bouillon)
- Salt to taste
Directions for the chicken:
- in a medium pan, melt butter over medium heat
- Add garlic cloves, let cook in the butter for about 1-2 mins
- Add chicken thighs to pan, let cook for about 30 seconds in the butter
- Add herb blend and pour in chicken broth, then add apple slices
- Cover and let simmer for 10 minutes, then flip chicken thighs and let simmer, covered, for about 5 more minutes or until the internal temperature reaches 165 degrees Fahrenheit
- Remove from heat and serve with residual juice from pan
Ingredients for the potatoes:
- 3 medium russet potatoes, chopped and peeled
- 1 onion, sliced
- Salt and pepper to taste
- 3 tbs olive oil

- preheat oven to 400 degrees Fahrenheit
- Add chopped potatoes to a baking sheet, cover in olive oil, salt, and pepper and spread evenly on the pan
- Once oven is ready, bake for 20 mins
- Remove from the oven, flip potatoes, and add sliced onion
- Roast for an additional 10 mins
- Remove from the oven and serve, enjoy!
