Mexican French Toast 🍞

We wanted some french toast for breakfast but ran out of bread & Hawaiian Rolls, looked in the cabinet && seen we had a load of tortillas!! So we have Mexican French Toast!! They remind me of a really thick crepe 😅

French Toast Batter:

✨ 2 Eggs

✨ 1/2 cup Milk

✨ 1 tbl Vanilla

✨ 1 tbl Cinnamon

💥 Beat all ingredients together

💥 Melt butter into a hot pan

💥 Dip both sides of tortilla in batter

💥 Cook on both sides

💥 Sprinkle with cinnamon sugar while hot

💥 Top with caramel sauce & whipped cream

The answer, my friends, is a resounding YES, and it led to this amazing Mexican French Toast hack. First off, let's talk tortillas. While corn tortillas are great for tacos, for this recipe, I highly recommend using flour tortillas. They're more pliable and absorb the French toast batter beautifully without getting soggy or falling apart like corn might. They also give you that soft, slightly chewy texture that reminds me a lot of a really thick crepe, but with a unique twist. The batter is super simple to whip up. Just like my original recipe, you'll need 2 eggs, 1/2 cup milk, 1 tablespoon vanilla, and 1 tablespoon cinnamon. I just beat all the ingredients together in a clear plastic container – it makes dipping so much easier!
