Ingredients:
- 1 box of chocolate cake mix
- 1 15oz can of pure pumpkin (not pumpkin pie mix!)
- Chopped Andes mints, you don’t need to measure, use as much or as little as you’d like - we used what was about 3/4 cup!
- Icing of choice - I love cream cheese icing for this!
- Crushed Candy Canes (optional!)
Directions:
1. In a large bowl, mix together cake mix, chopped Andes mints, and a full can of pumpkin. Keep mixing until all ingredients are fully incorporated. Make sure to fully mix in the cake mix at the bottom of the bowl!
2. Line cupcake pan with liners. This batter is a little sticky so I love to use two spoons to spoon it evenly into each cupcake liner! This will give you 12 cupcakes!
3. Bake at the temperature listed on the cake box for cupcakes. They will take 19-21 minutes. If you insert a toothpick into a cupcake and it comes out clean - you’re good!
