Blueberry French Toast

Made blueberry French toast with challah bread this morning, and I already know it’ll be on repeat. The challah gives it that rich, fluffy texture, and the blueberry syrup ties everything together. Breakfast doesn’t have to be complicated to be good. 🫐🍞

Ingredients

* 6 slices challah bread

* 3 large eggs

* ¾ cup whole milk

* 1 teaspoon vanilla extract

* 1 teaspoon ground cinnamon

* 2 tablespoons brown sugar

* Pinch of salt

* 2 tablespoons butter (for the skillet)

Blueberry Topping

* 1 cup fresh blueberries

* 2 tablespoons blueberry syrup (plus more for serving)

* Powdered sugar, for garnish (optional)

Directions

1. In a shallow bowl, whisk together the eggs, milk, vanilla, cinnamon, brown sugar, and a pinch of salt.

2. Heat a large skillet or griddle over medium heat and melt the butter.

3. Dip each slice of challah into the egg mixture, coating both sides without soaking it too long.

4. Cook for 3–4 minutes per side, or until golden brown and cooked through.

5. Warm the blueberries with the blueberry syrup in a small saucepan over low heat for 2–3 minutes, just until the berries begin to soften.

6. Stack the French toast, spoon the warm blueberry mixture over the top, drizzle with extra blueberry syrup, and finish with a light dusting of powdered sugar if desired.
