A friend of mine saw this trick on TikTok and I had to try it—and now it’s the only way I make chips! Instead of heating oil first, you start the potatoes in cold oil.
Ingredients:
♡ Thinly sliced potatoes (I used a potato peeler and russet or Yukon gold work best)
♡ Canola oil (vegetable oil works too)
♡ Your choice of seasonings (I used Trader Joe's Umami Seasoning)
Directions:
1. Place your sliced potatoes into a pot and cover with oil.
2. Set the pot over medium heat. Let it slowly warm up with the chips inside for about 5 minutes.
3. Increase the heat slightly and fry until the chips are golden and crispy.
4. Remove, drain on paper towels, and season immediately.
The fun part: You can flavor them however you like! Pinterest is full of DIY chip seasoning blends, so try everything from sour cream & onion to hot chili.

Unlike traditional frying where oil is heated before adding the potatoes, this technique involves placing thinly sliced potatoes into cold oil and gradually heating them together. This allows the potatoes to cook evenly and absorb less oil, resulting in a crisper, less greasy chip.
Using russet or Yukon gold potatoes is ideal because of their texture and starch content, which influence crispiness. A mandoline slicer or a potato peeler helps achieve uniformly thin slices that ensure even cooking. Canola oil or vegetable oil are preferred for frying due to their neutral flavor and high smoke points, making them safe for cooking at medium-high heat.
Once the potatoes and oil start heating, keeping the temperature controlled is key. Starting with medium heat for about five minutes slowly cooks the slices, preventing burning while allowing moisture to evaporate gradually. A slight increase in heat crisps the chips beautifully towards the end.
After frying, immediately draining the chips on paper towels removes excess oil, heightening crunchiness. Adding seasoning right away helps the flavors stick better. You can experiment with numerous seasoning blends like umami, sour cream & onion, spicy chili, or classic sea salt and pepper to customize your chips.
This method not only offers a fun DIY snack option but also encourages creativity with flavors. It’s a healthier alternative to packaged chips, free from preservatives, and customizable to your taste preferences. Plus, it makes for an impressive treat to share at gatherings or enjoy as a satisfying homemade snack any time.
