My Quinoa Protein Powerhouse Meal 😋

I’m always looking for ways to add protein into my diet, and this quinoa protein plate is a powerhouse. Plus it’s delicious! The slight sweetness of the quinoa pairs perfectly with the savory steak and crisp salad. Here’s the recipe:

Ingredients 🛒:

• 1 cup quinoa

• 1 ½ cup beef broth

• 1 romaine heart

• ¼ cup cherry tomatoes

• Boiled eggs

• 8oz ribeye steak

Directions 👩‍🍳:

1️⃣ Boil your eggs according to your liking.

2️⃣ Soak quinoa in water for 2 minutes to remove the outer coating (this prevents your quinoa from being bitter after cooking!). Rinse well under running water, using a fine mesh sieve.

3️⃣ Place quinoa and beef broth into a medium pot, and bring to a simmer over medium heat. Once simmering, turn heat to low and cook for 15 minutes. Remove from heat and allow to rest for 5 minutes before gently fluffing with a fork.

4️⃣ While quinoa is simmering, sear your ribeye for 2 minutes on each side. If your steak is thicker, place in the oven at 350F for 5 to 7 minutes to finish cooking.

5️⃣ Slice tomatoes, romaine, and boiled eggs.

6️⃣ Plate steak, quinoa, onions, mushrooms, salad and eggs, and enjoy!

💡 Chef’s Tip:

Drizzle drippings from the steak over the quinoa for a deeper flavor!
