When making mango sauce to complement fluke fish, it's important to balance the sweetness of the mango with the acidity from the limes and lemons to enhance the delicate flavor of the fish. Adding red onions gives a subtle sharpness and texture contrast, while ketchup and vinegar contribute depth and tanginess to the sauce. I like to start by chopping the mango and onions finely, then squeezing fresh lime and lemon juice directly into the mix to keep the flavors bright and fresh. Adjusting the proportions based on your personal preference is key—if you like it sweeter, add a bit more mango or ketchup; for a zestier punch, increase the lime or lemon. Pepper adds a nice gentle heat without overpowering the other ingredients. This sauce pairs wonderfully not just with fluke fish but also with other white fish or seafood. For a hassle-free side, I often use microwaveable rice bags—they save time and make cleanup easier, which is great for busy weeknights. Adding a ripe avocado on the side provides creaminess and a fresh contrast to the tangy sauce. This combination makes for a vibrant, healthy dish that’s quick to prepare and satisfying. Give it a try and feel free to experiment by adding herbs like cilantro or a dash of chili flakes to suit your taste!
