Healthy Banana Bread🍌🍞

Ingredients:

• 2 eggs, at room temperature

• 1/4 cup of avocado oil

• 1/4 cup of nut milk, at room temperature

• 1 cup of coconut sugar

• 1 tsp of vanilla

• 2 cups of ripe bananas (about 4 large bananas)

• 1 1/2 cups of paleo flour blend from @bobsredmill

• 2 tsp of baking powder

• 1 tsp of baking soda

• 1/2 tsp cinnamon

• A pinch of salt

• 1/2 cup of dark chocolate chips from @lilys_sweets (this is optional, without them is really good too)

Instructions:

1. Preheat your oven to 350°F

2. In a medium bowl, add the bananas and mash them. Set aside.

3. In a large mixing bowl, add the eggs, avocado oil, nut milk, vanilla and coconut sugar. Mix until well combined.

4. Add the mashed bananas to the mixture and combine well.

5. In a separate bowl, add the paleo flour, baking soda, baking powder, salt and cinnamon. Stir until just combined.

6. Add the dry ingredients into the wet ingredients, stirring until just combined. A few lumps are ok.

7. Add the chocolate chips if using, good then into the batter gently.

8. Pour the mixture into the prepared loaf pan and spread it evenly. Add more chocolate chips on top and a sliced banana (this is optional)

7. Bake for 50-60 minutes - First time I baked for 50minutes and even though the toothpick came out clean, the bottom was a little bit uncooked. Second time I baked for 60minutes and it was perfect. All ovens are different, so keep an eye on it towards the end to prevent over-browning.

8. Let it cool completely before slicing!!!
