Lazy girl, high protein dinner!

When I’m not feeling it with cooking dinner and there is no good leftovers in the fridge….this is my go to. Sheet pan quesadillas are always a hit!

In the morning I throw some chicken in the crockpot with taco seasoning and let it go most of the day. About 2/3 hours before dinner I chop up some bell peppers and red onion and throw them in there.

When it’s time for dinner I get a baking sheet and lay out burrito size tortillas to cover but let some hang off the edges to fold over. Fill your baking sheet with the chicken/peppers and add some cheese. Then put one more tortilla on top and fold over the rest to close it.

Lay another baking sheet on top while in the over so that it stays closed and gets cripsyyyyy.

I bake it at 375 for like 20-25 mins. Then top with whatever you want!!

Roughly 50 grams a protein per serving (8ish servings).

You can literally put whatever you want in there and it always turns out SO good!
