2 slices sourdough or whole grain bread

1 tbsp butter (for toasting)

1/2 cup shredded mozzarella cheese

1/4 cup shredded sharp cheddar cheese

1/2 cup fresh spinach

1 tbsp sundried tomatoes (oil-packed), chopped

1/4 tsp red pepper flakes (optional)

1/2 tsp olive oil (for sautéing spinach)

Pinch of salt

Instructions

1. Sauté the Spinach: Heat olive oil in a pan over medium heat. Add spinach with a pinch of salt and sauté for 1–2 minutes until wilted. Set aside.

2. Butter the Bread: Spread butter on one side of each bread slice.

3. Layer the Sandwich: On the unbuttered side of one slice, add half the cheese, sautéed spinach, sundried tomatoes, red pepper flakes, then the rest of the cheese. Top with the other slice, buttered side up.

4. Grill the Sandwich: Heat a skillet over medium heat. Place the sandwich on the pan and cook for 3–4 minutes per side, pressing gently, until golden brown and the cheese is melted.

5. Slice & Serve: Remove from heat, let sit for 1 minute, then slice and serve hot.
