... Read moreHey everyone! I've been getting so many questions about my go-to pasta dishes, and I just have to share my absolute favorite: Wild Mushroom Arugula Pasta. Seriously, if you're looking for something that feels gourmet but is surprisingly simple to whip up, this is it. It’s truly a ChefMade experience right in your own kitchen! I love how versatile this dish is. For the wild mushrooms, don't feel limited! I often use a mix of cremini and shiitake, but sometimes I splurge on oyster or even chanterelles when they're in season. Each type brings its own unique earthy flavor. The key is to sauté them properly – get that pan hot with a good drizzle of olive oil, don't overcrowd them, and let them get beautifully browned. This caramelization is where all the magic happens and creates such a rich base for the sauce. Now, for the arugula. Some people might think it's just a garnish, but it's essential here! Its peppery bite cuts through the richness of the mushrooms and any creamy sauce you might add. I usually stir it in right at the end, just until it wilts, to keep its vibrant color and fresh taste. If you add it too early, it can get soggy. When I'm making this, I always start by boiling my pasta water. While that's heating up, I get my mushrooms prepped and sautéing. By the time the pasta is al dente, everything else is usually ready to be tossed together. I find a short, sturdy pasta like penne or rigatoni works wonderfully, as it really holds onto the sauce, but linguine or fettuccine are also fantastic choices if you prefer a longer noodle. For a quick and easy sauce, I often just deglaze the pan with a splash of white wine, then add a knob of butter and a good amount of freshly grated Parmesan cheese. Sometimes, I’ll add a touch of cream or a splash of pasta water to create a really luscious, light sauce that coats everything perfectly without being too heavy. A grind of black pepper and a pinch of red pepper flakes (if you like a little heat!) are my final touches. This dish is not only delicious but also feels so comforting and nourishing.
