Healthy Breakfast Muffins

Step up your morning game with these delicious breakfast muffins!

Made with almond flour & rolled oats then packed with cranberries & walnuts…these muffins are kissed with maple syrup and totally worth waking up for!

Cranberry Walnut Breakfast Muffins

Ingredients:

2 1/4 cups almond flour

2 tsp baking powder

1 tsp cinnamon

1/4 tsp salt

1/4 cup coconut oil

1/4 cup almond milk

2 flax eggs

1/4 cup maple syrup

1 tsp vanilla extract

1/2 cup rolled oats

1 cup cranberries

1/2 cup walnuts, chopped

Instructions:

Preheat oven to 350° F and line muffin pan with liners

Sift together almond flour, baking powder, cinnamon and salt

Stir in oil, milk, flax eggs, maple syrup and vanilla extract

Fold in oats, cranberries and walnuts

Fill the muffin cups with the batter and sprinkle with more oats and walnuts

Bake about 22-25 min, until centers are set and a toothpick comes out clean

Let cool in pan about 10 minutes

Got this recipe/ idea from Jessica Barstow on TikTok. She does multiple variations but I wanted to try blueberry first. This were SO EASY and really good! I suggest adding some vanilla or cinnamon for a little extra sweetness but overall highly recommend! May kids loved them and heated them up
