[Part 4] Eating at Every Michelin Guide Restaurant

Jua (1 Michelin ⭐️)

🍴Food: 8.6/10

- standouts: CAVIAR KIM umami from the truffle rice and oscestra caviar, a refreshing crunch from the pickled chayote, and crispness from the lightly fried seaweed; GOGUMA JUAK is my favorite of the 2 desserts since donut has a warm sticky interior, like mochi, served with cold vanilla ice cream

- STRIPED JACK is refreshing while sitting in a smoked tofu puree

- everything is yummy, on the lighter side, maintains a good balance of textures and flavor changes from dish to dish

- GALBI & CHAN my favorite banchan is the perilla ssambap, which creates a lil flavor explosion in your mouth

- you have savory with a twinge of sweet in most dishes

✨Ambience: 7/10

- nice tall ceilings

- not too dim

🤵Service: 8/10

- very nice staff

- can see the passion for the food/ knows the dishes very well

Jua
2025/1/29 Edited to

... Read moreStepping into Jua, a 1 Michelin Star Korean restaurant in NYC, felt like entering a culinary sanctuary. If you're searching for michelin star restaurants near me or specifically michelin star in nyc that offers an unforgettable experience, Jua absolutely delivers. My journey through their jua nyc tasting menu was a masterclass in modern Korean fine dining, blending traditional flavors with innovative techniques and exquisite presentation. The article highlighted the CAVIAR KIM, and I can't stress enough how phenomenal it was. Imagine delicate truffle rice, perfectly seasoned, crowned with glistening golden oscietra caviar. As the OCR detailed, the base also includes beef tartare, pickled chayote, kimchi, and avocado crispy seaweed, creating a symphony of textures and flavors – a true umami explosion that set the tone for the evening. It’s definitely one of the jua nyc korean tasting menu dishes you'll remember long after, a brilliant start to any meal. The progression of the menu showcased a thoughtful balance, moving from delicate to more robust flavors. The STRIPED JACK was another visual and culinary delight. The delicate, flower-shaped pickled beets layered over a creamy smoked tofu puree, as described in the OCR, complemented the fresh fish beautifully. Each plate was a work of art, meticulously arranged to satisfy the eye, truly addressing any curiosity about jua nyc tasting menu plating. The JOOK, a creamy rice porridge made with chicken stock, garnished with smoked eel, spinach, sesame, and hen of the woods mushroom, was surprisingly comforting yet refined. And the dry-aged 3-day cured branzino with myeongran, pickled leeks, asparagus, and sesame chili oil was a testament to their mastery of seafood, perfectly seared with a crispy skin. But let's talk about the desserts, especially the GOGUMA JUAK. If you're wondering about goguma juak or even seeking a michelin star pancake equivalent for dessert, this is a must-try! It's not a pancake, but a warm, sticky pumpkin donut that melts in your mouth, reminiscent of mochi, perfectly paired with a scoop of cold vanilla ice cream. The contrast of warm and cold, soft and creamy, was pure bliss. Another unique dessert was the PERILLA sorbet, topped with a perilla sugar oblea and yuzu apple compote, offering a refreshing and herbaceous end to the meal. The GALBI & CHAN course, featuring soy-marinated prime short rib alongside an impressive array of banchan including perilla ssambap, crispy lotus root, and baby bok choy kimchi, was a highlight for its interactive and rich flavors. The perilla ssambap indeed creates that "lil flavor explosion" described in the original review. The staff's genuine passion for the food, their detailed explanations of each dish, and the serene ambience with its nice tall ceilings, all contributed to an exceptional dining experience. Jua isn't just a meal; it's an immersive culinary journey that I highly recommend for anyone seeking an extraordinary Korean dining experience in New York City. For a truly special occasion or simply to indulge in some of the city's finest flavors, Jua should be at the top of your list.
