I'd seen pictures of the whole roasted dry-aged duck presented beautifully, and my experience with the slices of dry-aged Crown of Rohan duck definitely left an impression. While some pieces were a tad chewy and the skin not as crispy as I'd hoped, the flavor profile was undeniably rich and complex. It’s a dish that demands attention, embodying the French-American flair Francie is known for. If you're searching for dry aged rohan duck, Francie's rendition is certainly a memorable one, even if it has a few textural quirks. Then there’s the Roman Army Sourdough bread. This wasn't just any bread service; it came tied with twine, served with an incredibly intriguing pig-shaped whipped lard and a sunflower seed spread. It was so unique that it’s completely stuck in my mind. It’s definitely one of those elements that sets a Michelin-starred restaurant apart – creative, unexpected, and executed with finesse. And speaking of unforgettable, the michelin french fries here are absolutely a must order. They are genuinely humongous and perfectly crispy, elevated further by a side of creamy garlic aioli. Forget your average fries; these are in a league of their own. Beyond the headliners, the side dishes truly shone. My favorite ended up being the mashed parsnips with their delightful crunchy bits of corn, topped with chopped green onions and breadcrumbs – a perfect blend of sweet and savory textures. We also tried the sautéed swiss chard with pine nuts and the flavorful diced soppressata jam, which added interesting dimensions to the meal. These details really solidify the idea that every component of the Francie restaurant menu is carefully considered.
