BBQ Chicken Sweet Potato Bowls:
Ingredients:
• 1lb chicken (ground or any cut you prefer)
• 2-3 sweet potatoes
• bbq sauce (your flavor of choice - I prefer a mustard base)
• olive oil & seasonings (garlic powder, onion powder, s&p)
• toppings: corn, slaw, red onion, shredded cheese, bacon, etc….)
Directions:
1. Preheat oven to 400 degrees
2. Chop sweet potatoes & place on sheet pan
3. Drizzle sweet potatoes with olive oil & add garlic powder, onion powder, s&p
4. Cook sweet potatoes at 400 degrees for 20-25 minutes
5. Cook chicken - while chicken is cooking add same seasonings from sweet potatoes & add 1/4 cup bbq sauce
6. Once sweet potatoes & chicken are done, build your bowl; sweet potatoes & chicken are the base and then add your toppings of choice!
