Sweet Potato Gnocchi w/ Sage Butter Sauce

This turned out AMAZING.

I don’t have a exact measurements for the gnocchi, but I used:

- two large sweet potatoes (baked, skinned & mashed)

-1 egg

-roughly 1 & 2/3 cup of flour (enough to form a soft, kneadable dough)

-1 tsp salt

-dash of garlic powder

-dash of nutmeg

i also used flour for dusting to keep them from sticking together. I dropped them in salted boiling water for about 5-7 minutes, then strained & cooled them.

In a sauté pan, for one serving, I added:

-1 tablespoon of butter

-heavy dash of rubbed sage

-chicken bouillon to taste (don’t over salt it, it doesn’t take much)

-garlic powder

-onion powder

-red pepper flakes

(if you’re making all of the gnocchi at once, you’ll need to up the ingredients to your taste)

On medium heat, I added a handful of gnocchi and sautéed until some of the sides started to get golden brown.

Next, I added:

-handful of spinach

-couple sprinkles of sliced almonds

-2 to 3 tablespoons of heavy cream (off the heat)

Stir until the spinach wilts & it’s ready to plate!

I topped mine with goat cheese but grated parm would work well also!

When I make this again, I may add some diced apples or slices of pear to brighten it up a little bit.

Overall, I give this an 8.5/10 for sure!
