Oven Baked Chicken Meatballs

Ingredients: (I doubled the recipe to freeze half)

1 lb ground chicken

½ cup breadcrumbs

¼ cup finely chopped red onion

2 cloves garlic, minced

1 large egg

2 tbsp fresh parsley, chopped

1 tsp dried oregano

½ tsp salt

¼ tsp black pepper

Instructions:

Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.

Mix all ingredients in a large bowl until well combined—don’t overwork the mixture to keep the meatballs tender.

Form meatballs about 1 to 1½ inches in diameter and place them on the prepared baking sheet.

Bake for 25 to 30 minutes or until meatballs are cooked through and slightly golden.
