🛒 Ingredients

• 1½ lbs chicken thighs or breasts (cubed)

• 1½ cups uncooked jasmine or long-grain rice

• 2½ cups chicken broth

• ¼ cup honey

• ¼ cup soy sauce

• 3 cloves garlic (minced)

• 1 tbsp rice vinegar or apple cider vinegar

• 1 tsp paprika

• ½ tsp black pepper

• 1 tbsp olive oil

• Optional: steamed broccoli or green beans

• Optional topping: sesame seeds + green onions

👩‍🍳 Instructions

1. Preheat oven to 375°F (190°C).

2. Whisk sauce: honey, soy sauce, garlic, vinegar, paprika, pepper, and olive oil.

3. Layer rice in a greased 9x13 baking dish. Pour in chicken broth.

4. Add chicken evenly over the rice.

5. Pour sauce over everything (do not stir).

6. Cover tightly with foil and bake for 35 minutes.

7. Uncover, stir gently, add veggies if using, and bake 10–15 more minutes until rice is fluffy and chicken is glazed.
