I absolutely love lemongrass, I grew up using it quite often as it can be used in many different ways. With such a delicious bright flavor, it’s the perfect aromatic for pork. Pair with either white or coconut rice and cucumber for an easy and delicious pairing. Make sure to give this recipe a try!

- 1 1/2 pounds boneless pork chops, cubed

- 1 1/2 tablespoon lemongrass, minced

- 3 cloves garlic, minced

- 1 1/2 tablespoon fish sauce

- 1 1/2 tablespoon soy sauce

- 1 1/2 tablespoon honey

- 1 1/2 tablespoons vegetable oil

- 1/2 teaspoon pepper

Directions:

1. In a bowl, combine cubed pork, lemongrass, garlic, fish sauce, soy sauce, honey, oil and seasonings. Marinate for at least 4 hours or overnight.

2. Add some oil to a pan. Cook the marinated pork on medium high heat for 8 to 12 minutes, flipping in between. Once the temperature is 145°F, the meat is cooked.

3. Serve immediately with white or coconut rice (highly recommend), cucumbers, seasoned tomatoes, and a fried egg. Enjoy!
