1 cup pumpkin puree

1 teaspoon vanilla extract

1/4 cup maple syrup ( for lower cal do 3 tbsp)

1 egg white (u can use whole egg for more healthy fats)

2 cups gluten-free oats quick, minute or rolled

1 teaspoon baking powder

½ teaspoon cinnamon (I use a drop more)

Splash of nutmeg

¼ teaspoon salt

2 tablespoons mini chocolate chips

Instructions:

1. Bake at 350 for 12 minutes

I usually make 24 medium small cookies at 50 each
