Here’s a quick guide to common steak doneness levels and the internal temperatures to aim for after resting:
Rare (120-125°F / 49-52°C): A cool red center, very soft to the touch. This is for those who truly appreciate the raw, beefy flavor.
Medium-Rare (130-135°F / 54-57°C): A warm red center. This is often considered the ideal doneness by many chefs, offering tenderness, juiciness, and rich flavor.
Medium (135-140°F / 57-60°C): A warm pink center. My personal favorite! It’s still very juicy, with a firmer texture than medium-rare.
Medium-Well (145-150°F / 63-66°C): A slightly pink center. The steak is firmer and less juicy than medium, but still has some moisture.
Well-Done (155-160°F+ / 68-71°C+): Little to no pink, firm throughout. While not my preference, some people truly enjoy their steak this way!

First, always start with good quality raw steaks. Before they even hit the pan, I like to season them generously with salt and pepper. Don't be shy – this really brings out the flavor! Then, make sure your pan is screaming hot. Add a little oil to the pan – just enough to coat the bottom – and once it shimmers, carefully place your seasoned steak in.
Searing is crucial for developing that amazing crust. Cook for a few minutes on each side until deeply browned, then reduce the heat and continue cooking, flipping occasionally, until it reaches your desired internal temperature. This is where a good meat thermometer becomes your best friend. Seriously, it takes all the guesswork out of it! Pull the steak off the heat a few degrees before it reaches its target temperature, as it will continue to cook while it rests (this is called carryover cooking).
