KFC Bowl Casserole 🍗🌽🧀
I started out making the fancier versions of this I found online, but over time I turned it into this quick and easy version. Now it’s one of my go-to meals when time and money are both tight. It’s super easy, filling, and so good!
What you need:
* 1 family-size Bob Evans mashed potatoes
* 1 regular-size Bob Evans mashed potatoes
* 2 cans whole kernel corn, drained
* Fully cooked frozen chicken strips
* Thick-shredded Colby Jack cheese
* 1 packet brown gravy mix
* Water needed to prepare the gravy according to packet directions
* Cooking spray
How I make it:
1. Preheat oven to 350°F and spray a 9x13 pan with cooking spray.
2. Heat both packages of mashed potatoes according to the package directions, then spread them evenly across the bottom of the pan.
3. Drain both cans of corn and spread them over the potatoes.
4. While I’m doing all of that, I throw some already-cooked chicken strips in the air fryer. Once they’re hot and crispy, roughly chop them up and spread them over the corn.
5. Top with a generous amount of thick-shredded Colby Jack cheese. I usually do at least two big handfuls, probably more if we’re being real.
6. Bake for 20 to 30 minutes, until everything is heated through and the cheese is nice and melted.
7. While it’s baking, prepare the brown gravy using the water called for on the packet.
8. Drizzle the gravy all over the top and serve!
This is definitely not one of those fancy made-from-scratch recipes, but that’s kind of the point. It’s quick, easy, budget-friendly, and perfect for those nights when you need to get something filling on the table without spending all evening in the kitchen.

I make KFC in a 9×13 I have made it with instant potatoes and homemade potatoes, both good!!! I freeze sweet corn from a local farm ❤️. I've cut up frozen chicken strips and I have used shredded chicken. Both good 👍 Leftover turkey too 🍗☺️👍 Love that's it is versatile 🥰
