Hidden veggie mac and cheese

1 sweet potato

1 cauliflower

1 yellow onion

1 red bell pepper

1 tbsp oil

salt and pepper to taste

For the cheese sauce

1 cup whole milk

2 tsp garlic powder

2 tsp onion powder

2 tsp dijon mustard

2 tsp cornstarch

2 cups shredded cheddar

16 oz elbow macaroni

Chop veggies, coat in oil and roast. Cook pasta in the meantime save 1 cup of pasta water. Puree veggies. Add veggies to empty pot with pasta water and mix, then add the cheese, mix. Add in cooked pasta, mix.

My 13 month old loved it, she had it with pot roast and carrots.
