Maple Glazed Apple Fritter Loaf/Cake

Soft, fluffy, and packed with caramelized apples, swirled with cinnamon sugar, and topped with a dreamy maple glaze. Cozy bites in every slice!

🔘Ingredients:

1/2 cup granulated sugar

1/2 cup(113g) butter unsalted (room temp)

2 large eggs (room temp)

1/2 tsp salt

240g all-purpose flour

2 tsp baking powder

1/2 cup sour cream (room temp)

1 tsp vanilla extract

🔘Apple Feeling:

2 cups gala apples (peeled and diced)

1 tbsp dark brown sugar

1 tsp ground cinnamon

🔘Brown sugar swirl:

1/4 cup dark brown sugar

1 tsp ground cinnamon

🔘Maple glaze:

1/2 cup powdered sugar

3-4 tbsp maple syrup

1 tbsp heavy whipping cream

🔘Prep and Baking Process:

Preheat oven to 350°F/180C.

Butter and line a loaf pan with parchment paper, set aside.

In a medium bowl, sift together the flour, baking powder, and salt. Set aside.

In a small bowl mix the apples with brown sugar and cinnamon. Set aside.

In a separate bowl beat together the butter and sugar until light and fluffy, about 5 minutes.

Add eggs and beat for 1-2 mins.

Gradually add the flour mixture. When flour is incorporated, add in the sour cream and vanilla.

Pour the half of batter into the prepared pan, spread evenly. Top with half of cinnamon apples and sprinkle with cinnamon sugar. Spread evenly the remaining batter, top with remaining apples and cinnamon sugar. Spread evenly and press apples slightly inwards.

Bake for 70-80 minutes. Check for readiness with toothpick( a toothpick inserted into the center of the loaf should come out clean once ready).

Let the loaf cool and while it is getting cooled down, make your glaze.

In the small bowl, whisk together powdered sugar, warm heavy cream and maple syrup until smooth.

Pour the glaze over the top of the loaf. Let it rest for 10 min.

Serve warm with coffee or tea and Enjoy! ☕️♥️
