✨ Easy Sweet Potato & Black Bean Wrap ✨
I’m always looking for meals that are easy, filling and made with ingredients I regularly have on hand.
I always have at least sweet potatoes and most of these ingredients at home. For this recipe I roasted a sweet potato with chili powder, cumin and garlic, then loaded up a wrap with black beans, spinach and salsa. The sweet potato makes it slightly sweet, the salsa adds a little kick, and the guac is self explanatory. Crisping the finished wrap in a pan makes it SO much better.
Ingredients
* 1 large sweet potato, skin left on and scrubbed
* 1 can black beans, drained and rinsed
* 1/2 can corn, drained and rinsed
* 4 large wraps/tortillas
* 1 cup baby spinach
* ½ cup shredded cheddar or Mexican-blend cheese (optional)
* ½ cup salsa
* 1 tbsp avocado oil
* ½ tsp chili powder
* ½ tsp cumin
* ¼ tsp garlic powder
* Salt + black pepper
* Optional: guacamole or plain Greek yogurt, I use both

Directions
1. Heat oven or air fryer to 425°F.
2. Cut the unpeeled sweet potato into small ½-inch cubes.
3. Toss with avocado oil, chili powder, cumin, garlic powder, salt and pepper.
4. Roast for 20–25 minutes, flipping halfway, until tender with browned edges.
5. Warm the drained black beans with a couple spoonfuls of salsa and a pinch of cumin for about 5 minutes, then mix in the corn.
6. Warm your wrap so it’s flexible.
7. Layer spinach, roasted sweet potato, black bean and corn mixture. Top with guacamole and plain Greek yogurt
8. Fold tightly.
9. For the best finish, put it seam-side down in a dry skillet and toast 2–3 minutes per side.
10. Slice diagonally.
