Protein Pancakes
🥞 Blueberry Protein Pancakes 🥞
Ingredients:
- 40g pancake mix
- 1/2 cup unsweetened almond milk (or any milk of your choice)
- 170g zero Greek yogurt
- 1/2 cup fresh blueberries (plus extra for topping)
2tbs Sugar free syrup
Instructions:
1. Combine Wet and Dry Ingredients:
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Gently fold in the blueberries. ( I would personally add blueberries into the batter when it’s cooking. Adding it before made the pancakes chunky)
2. Cook Pancakes:
- Heat a non-stick skillet over medium heat and lightly grease with coconut oil or cooking spray.
- Pour 1/4 cup of batter onto the skillet for each pancake.
- Cook for 2-3 minutes on each side, or until bubbles form on the surface and the edges are set.
