Lemon Poppy Seed Protein Pancakes 🥞🍋

These were a random late night creation that turned out to be one of the best pancakes I’ve ever had 🤪

Gluten Free | Vegetarian Friendly

INGREDIENTS:

3/4 cup oat flour - Mine is by @prozis

30g vanilla protein powder - I used the @prozis natural vanilla whey protein powder - Use the code KATIE10 for 10% off!

1 tsp baking powder

1/4 tsp salt

1 tbsp monk fruit or stevia

1/8 cup poppyseeds

1/4 cup lemon juice

1/4 cup almond milk

3/4 cup Greek yogurt

3 tbsp egg whites

INSTRUCTIONS:

Whisk together all of the dry ingredients and then add the wet ingredients and mix until fully incorporated. Preheat a skillet or griddle over medium heat and cook pancakes for about 3 minutes in each side. Makes 6 pancakes. Top with a lemon glaze and/or sugar free maple syrup and enjoy!
