2️⃣ Ran the VP95 for 5 cycles and let the bavette sit in the refrigerator for over 4 hours.
3️⃣ Pulled the Bavette out of refrigeration and then tossed over flaming hot JD Chunx XL Lump Charcoal in my @pkgrills PKTX
4️⃣ Let it go to 125 degrees internal temp measured by @meatermade Meater Pro and let rest for 5 minutes before slicing with my 12” Wavy Edge Slicer from @vacmasterfresh
