Ingredients for large batch!
* 2.2 lb button mushrooms
* 2 red onions, thinly sliced
* 2 bell peppers, thinly sliced
* 1 bunch fresh parsley, chopped
* 100 ml (⅓ cup + 1 tbsp) soy sauce
* 5–6 garlic cloves, minced
* 2 tbsp whole grain mustard
* 120 ml (½ cup) vegetable oil
* 1 tbsp sugar
* 1 tsp salt
* 1–2 tsp lemon juice
Instructions:
1. Bring a large pot of water to a boil.
2. Add the mushrooms and cook for 10 minutes. Drain and let them cool.
3. In a large bowl, combine the mushrooms, sliced onions, bell peppers, parsley, and garlic.
4. Add the soy sauce, whole grain mustard, vegetable oil, sugar, salt, and lemon juice.
5. Mix until everything is well coated.
6. Cover and refrigerate for 24 hours before serving.
