Bbq pineapple chicken

On my account, we ditch the guilt and the 27-step recipes. We’re talking real life here: quick, high-protein, five things you can actually pronounce, and you still have the energy to binge-watch your show after bedtime (without passing out on the couch). Because honestly, dinner should be fueling you for surviving homework meltdowns, PTA emails, and the third “mom, I’m still hungry” of the night, not making you feel like you’re running a restaurant you never applied for.
You’ll need chicken, pineapple chunks + juice, bbq sauce, honey & apple cider vinegar.
For the Chicken:
* 1-1.5 lb chicken
* 1 cup pineapple chunks
* 1/2 cup barbecue sauce
* 2 tablespoons olive oil
* 1 teaspoon garlic powder
* 1 teaspoon onion powder
* 1 teaspoon smoked paprika
* 1/2 teaspoon salt
* 1/4 teaspoon black pepper
For the Glaze:
* 1/4 cup barbecue sauce
* 2 tablespoons pineapple juice
* 1 tablespoon honey
* 1 tablespoon apple cider vinegar
Rub the olive oil all over the chicken breasts, then evenly coat them with the spice mixture.
Arrange the pineapple chunks around and on top of the chicken breasts. Drizzle 1/4 cup of barbecue sauce over the chicken and pineapple.
Cover the baking dish with aluminum foil. Bake at 425 for 20 minutes. Prepare the glaze. After 20 minutes, remove the foil and brush the glaze generously over the chicken and pineapple. Return to the oven, uncovered, for an additional 10-15 minutes.
